Made this moist carrot cake

This moist carrot cake with cream cheese frosting will be your new go-to recipe. It’s tender and soft with a delicious carrot cake flavor and can be made with or without pineapple for the perfect carrot cake recipe!


  • 3 cups flour

  • 4 tsps baking powder

  • 1/2tsp bicarbonate of soda

  • 1 and 1/2 tsp of all spice (I got mine at Woolworths)

  • 1tsp cinnamon

  • 1/2 cup coconut

  • 4 eggs

  • 1 cup brown sugar

  • 1 cup oil

  • 1 tsp caramel essence (got it at Woolworths)

  • 2 cups grated carrots

  • 1/2 cup chopped pineapple

Mix dry ingredients. Add your wet ingredients. Mix well. Bake at 180 degrees for 30-35 minutes.

Cream cheese frosting
1/2 cup icing sugar
1 tub cream cheese
Lemon juice (used one lemon)
Lemon zest (used one lemon)

Garnish with chopped almonds.
